PRODUCT DESCRIPTION

Durum is the hardest of the hard wheats and is amber in color and larger than those of other wheat varieties. Durum has high protein and gluten content and is typically used for premium whole grain pasta products, pizza doughs, and breads, however, it lacks the desirable gluten structure of other hard wheats and should be combined with other strong gluten content flours to provide structure. With a slightly nutty, wheat flavor, Durum is a good source of protein, phosphorous, magnesium, manganese, and selenium.
